Aniseed consists of small, ridged, grey-green seeds with a sweet, penetrating scent. Fragrance matters: even sound-looking seeds lose much of their appeal when stale.

Confectioners coat them in sugar to make comfits, including the French sweets called anis à la reine. Apothecaries use them in digestive remedies. The seeds of commerce are the dried fruits of a plant with small flowers in umbrella-shaped clusters. They share a scent with star anise, but look nothing like its woody, star-shaped fruits.
