Cinnamon is thin, reddish-brown bark that curls into quills as it dries. Snapping a piece releases its warm scent. The aromatic bark, rather than the tree's timber, is the valuable part.

Cooks use it in meat dishes and sweetmeats, and apothecaries in remedies. In Ceylon it also flavours rice-and-sugar provisions made for journeys. Preparing the spice means stripping away the outer bark, keeping the useful inner layer and drying it. The light quills in a merchant's stock are the result of this careful work.
