Fennel seed is an elongated, ridged spice, greenish to brown when dried. Bruising the grains releases their familiar anise-like scent.

Apothecaries use them in preparations for digestion and the breath. The seeds grow on the umbrella-shaped flower heads of a tall plant with finely divided leaves. Once harvested and dried, they form a light cargo whose aroma is easier to recognise than the small grains themselves.
