Export regions

Mace is the divided covering around a nutmeg, red when fresh and orange after drying. It looks like a delicate network of strips. Though sometimes called the flower of nutmeg, it is not a flower.

Cooks and apothecaries buy it for its fragrance and flavour. Opening the nutmeg fruit yields two separate spices: the nut and this covering, which is carefully removed and dried. Whole mace keeps its distinctive shape until it is broken or ground for use.
