Makrut lime is a small citrus fruit with a deeply knobbled rind. Much of its fragrance lies in that thick skin and in its distinctive leaves, whose broad, winged stalks make them look like pairs joined end to end.

Bruising a leaf or cutting the zest releases a lively citrus scent. It is this aromatic material, rather than an abundance of juice, that makes the plant useful for flavouring. The fruit grows on a small tree of Asian origin. Its rough skin and scent distinguish it from an ordinary lime.
