Export regions

New England fish is shipped mainly in preserved forms, especially cod that has been split, salted and dried. The flattened pieces bear the marks of preparation rather than the sheen of a fresh catch.

This trade supplies ports and overseas settlements. Lower grades also find markets on West Indian plantations, where they feed enslaved people. Salting and drying make the long voyage possible, linking North Atlantic fisheries with the demand for provisions in much warmer climates.
