Peppercorns are the fruits of a climbing vine. Black pepper dries with its outer skin, giving it a wrinkled surface; white pepper has that covering removed. Whole grains retain their aroma until crushed.

Cooks, spice merchants and apothecaries all buy pepper. It can travel in sacks, as it did aboard the Mauritius, wrecked in 1609 with other Asian cargo. Harvesting and preparation turn clusters of fruit into the dry grains that arrive at a merchant's counter after months at sea.
