Sichuan pepper is valued for the fragrant husks of small fruits, which split open around dark seeds. The husks give a citrus-like flavour and a tingling, slightly numbing sensation.

Chinese cooks use them in savoury and sweet preparations, including cakes with sugar, fennel and sesame. The fruit grows on prickly shrubs, then is gathered and dried. In a merchant's lot, the useful aromatic material is chiefly the husk, so a heap of dark seeds is not a sign of a better spice.
