Sugar is shipped in several forms, from brown sugar to refined conical loaves. White loaves wrapped in blue paper look quite different from the darker product of earlier processing; they are broken or grated when needed.

Confectioners and wealthy kitchens use sugar for sweets, chocolate, coffee and other drinks. Mills crush the cane, then the juice is heated and processed. On Atlantic plantations, this production relies on brutal forced labour. The finished cargo may conceal both that work and the successive stages of refining.
