Vanilla is the long fruit of a climbing orchid. Curing turns the green pods dark, supple and fragrant, with many tiny seeds inside.

It flavours chocolate in Mexico. The scent sought by buyers develops during preparation, rather than being ready in the freshly picked fruit. Harvesting and curing require care; at the counter, the pods' suppleness and fragrance tell a buyer more about their condition than their length alone.
